Vegan Chickpea Frittata Muffin

Start your day right with these delicious Vegan Chickpea Frittata Muffins! Packed with protein and veggies, they make for a perfect breakfast on the go! 🌱🥦✨ 

Ingredients:
– 1 can chickpeas, rinsed and drained
– 1/4 cup nutritional yeast
– 1/2 cup almond milk (or any plant-based milk)
– 1/4 cup flour (chickpea flour preferred)
– 1/4 teaspoon turmeric
– 1/4 teaspoon garlic powder
– 1 teaspoon baking powder
– 1 cup mixed vegetables (spinach, bell peppers, onions, etc.)
– salt and pepper to taste

Directions:
1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or give it a light grease.
  
2. Grab your blender or food processor and combine the chickpeas, nutritional yeast, almond milk, flour, turmeric, garlic powder, baking powder, salt, and pepper. Blend until you get a nice, smooth, and creamy mixture.

3. Transfer the blended goodness into a bowl and gently fold in those colorful mixed vegetables.

4. Now it’s time to fill! Scoop the batter evenly into the muffin tin cups, filling each about 3/4 full. 

5. Pop them into the oven and bake for 25-30 minutes. You’ll know they’re ready when they feel firm to the touch and boast a lovely golden hue.

6. Let them cool for a few minutes before gently removing from the tin. Serve them warm or at room temperature – either way, they're delightful!
